Ballaro, Warsaw: Giacomo Carreca Comes Home to Sicily

The Room
Ballarò opened in May 2026 on Śniadeckich, tucked between Plac Konstytucji and the quieter streets of central Warsaw. The first thing you notice is the steel portal, a welded steel frame that Public Studio built around what was originally a functional problem, and turned into the compositional axis of the entire room. It works. It is modern, it is confident, and it does not fight the Mediterranean warmth the rest of the room is trying to create.
Warm light, outstanding details, open kitchen. Sit at the bar if you can. It is where the evening changes.
The Food
We were fortunate to sit directly in front of Giacomo Carreca as he worked. Giacomo is not a new name in Warsaw. Senses, Bistro de Paris, Va Bene Cicchetti, Madre. Ballarò is his most personal restaurant yet, and you can feel it in every course.
The crudo opened the meal with clean, precise Southern Italian instincts. The tortillitas starter followed, delicate and intentional, exactly the kind of small plate that does not need to prove anything to earn its place. The iberico is the best-selling dish for a reason. When we asked, it was recommended without hesitation, and it is easy to understand why. It is the most complete plate on the menu.
The turbot came from a Japanese-style grill. This is where fire becomes a flavour pillar rather than a marketing line. The technique was different from what most Warsaw kitchens are doing with fish, and it took a moment to read what the kitchen was going for. Not the strongest dish of the evening, but not weak either. Just a different vocabulary.
The chocolate dessert closes the case. It is one of the better restaurant desserts we have eaten in Warsaw this year and it is the kind of ending that makes the whole meal land properly.
The Wine
The list leans Southern Europe. The sommelier was helpful without pushing, comfortable with the non-alcoholic pairing (kombucha-based wines and other alternatives) that one of us chose. A wine list that supports a non-alcoholic diner as thoughtfully as an alcoholic one is a small detail that reveals a lot about the philosophy of the house.
The Verdict
Ballarò is one of the strongest Warsaw openings of the year. Giacomo Carreca has taken everything he learned across some of the city's most serious kitchens and built something that finally sounds like him. The steel portal, the fire, the Sicilian instinct, the way the room pulls you into a slower rhythm. This is a place with a genuine point of view.
We expect to see it in more reviews and more recommendations over the next year. Book now before that becomes harder.
