Bajs, Warsaw: New-Polish Comfort at Hala Koszyki

The Setting
Bajs sits inside Hala Koszyki, the old market hall on Koszykowa that has become one of the most reliable dining addresses in central Warsaw. The room is warm and legible, exposed brick, olive-green chairs, natural light. The courtyard tables are the ones to book. On a summer evening, quiet, well-spaced, unhurried in the best sense. The room was not crowded during our visit, which allowed the space to breathe the way it should.
The Concept
Bajs is new-Polish. The menu reads like a considered attempt at what modern Warsaw comfort food should look like, tatar z pomidorów, śledź matjas, kaszanka z musem z gruszki, pyzy z ogonem wołowym, sztuka mięsa, schabowy z kością. Nothing precious. Nothing chasing fine dining vocabulary that does not belong in a bistro like this. That restraint is a point of view, and it works.
The Food
We ordered widely, everything to the table, sharing to taste as much of the kitchen as possible.
The pyzy with braised oxtail were the standout. Rich, dense, confident, the kind of dish that reminds you why Polish comfort food does not need reinvention when it is executed properly. Order these. If you order one thing at Bajs, order these.
The schabowy z kością was very good. The technique on the meat was clean, the mashed potato was strong, and the mizeria was the right idea, one notch too salty on the day we visited. Adjust once and this is one of the best schabowy plates on Koszykowa.
The gofry z ziemniaków opened the meal on a good note. Not revelatory, but pleasant and correct. A quiet dish that gets the palate ready for the heavier plates.
The pierogi with crayfish were ok. Respectable. The stuffing was clean, the cream sauce with leeks was well seasoned but a but to strong, the trout roe added the required visual element. At 64 PLN for the plate, we expected slightly more precision. Not weak, not memorable.
The white chocolate cheesecake for dessert was adequate. It closed the meal without adding much to it.
The Service
Warm and friendly throughout. The team clearly cares about the room. The one weakness was pacing, we waited longer for food than the plates justified. Not the kitchen's fault necessarily, a busy service, but worth naming.
The Verdict
Bajs is a solid Warsaw table with real ambition and room to sharpen. The pyzy are already at the level that puts them in conversation with any Warsaw comfort classic. The schabowy is nearly there. The pierogi and dessert have another gear the kitchen has not yet found.
For an evening at Hala Koszyki, an ogródek meal, or a serious plate of pyzy in central Warsaw, Bajs earns its place. This is the kind of restaurant Warsaw should have more of.
